1. Wheat’s End Cafe and Bakery — in its own words, a “100% dedicated gluten-free facility”
The strongest claim on this list belongs to Wheat’s End, and it is theirs: “Our cafe is a 100% dedicated gluten-free facility,” says the cafe’s own site, which bills the place as Chicago’s “Surprisingly Gluten-Free” cafe and bakery and notes, as of our check, “Carryout and Delivery Only.” The license file’s receipt: WHEAT’S END CAFE AND BAKERY, legal name SENZA LLC — senza, as filed — at 543 W Diversey Pkwy, latest Retail Food Establishment license running to September 15, 2026, in the file as retrieved.
2. Do-Rite Donuts — three of today’s selections tagged GLUTEN-FREE
Do-Rite’s menu page renders its selections with dietary tags, and on our September 8 check three donuts carried the tag GLUTEN-FREE and three the tag VEGAN, printed exactly that way. The site lists five locations — Streeterville, West Loop, Willis Tower, Wrigleyville, and Tinley Park, the last outside Chicago. The license file’s receipts for all four Chicago storefronts: DO-RITE ERIE LLC at 233 E Erie St (license to August 15, 2028), DO-RITE WT LLC at 233 S Wacker Dr (October 15, 2027), DO-RITE FULTON MARKET LLC at 181 N Morgan St (June 15, 2027), and DO-RITE ADDISON LLC at 1027 W Addison St (December 15, 2026) — one company per storefront, as the file keeps them.
3. Downstate Donuts — gluten-free potato donuts, weekends, pre-order
Downstate’s pitch is specific and its own site states the terms: “The most flavorful GF potato donuts are now back and available weekends,” marked “PRE-ORDER ONLY Sat & Sun” as of our check — alongside an ingredient list that includes, in the site’s own capitals, “UNBLEACHED KING ARTHUR FLOUR” for its conventional line — flour on one part of the menu, the gluten-free potato donuts on the pre-order part, both as printed. 4. Firecakes — whose own menu says “Gluten-Friendly,” not gluten-free
Firecakes belongs on this page with an asterisk the shop itself supplies: its menu labels the option “Gluten-Friendly (limited availability/preorder recommended).” That is the shop’s own choice of words, and this page will not upgrade it to gluten-free on the shop’s behalf; readers for whom the distinction matters have the shop’s own phrasing to weigh. The earlier version of this page carried five shops, single-donut prices, and no sources. The Glenview shop is out because this is a Chicago list; the prices are out because they age badly and the shops’ own pages carry the current ones; and every claim that remains now traces to either the named shop’s own site or the city’s license file, both checked September 8, 2026. What this page still is not: an assessment of any kitchen’s practices. The strongest statement here — a 100 percent dedicated facility — is Wheat’s End’s own, and the most careful — Gluten-Friendly — is Firecakes’ own, and the distance between those two phrasings is exactly the information a gluten-free reader came for.
